Lactobacillus Strains
نویسنده
چکیده
Normal C14, C 6, and C,8 saturated acids and C16 and C18 monoenoic acids are the main fatty acids of nine strains of Bifidobacterium. Their lactobacillic acid content was less than 5%. Lactobacillus strains contained the same fatty acids as main compounds except for octadecanoic acid, which was present only in very low amounts. Eight of nine Lactobacillus strains contained in the stationary phase more than 15% lactobacillic acid. No correlation was observed between the fatty acid composition and other physiological characteristics used in the literature for classification of strains of one genus. Aging of the culture, which involved a decrease of the pH, caused a lengthening of the chain length of the fatty acids of B. bifidum var. pennsylvanicus but only a conversion of octadecenoic to lactobacillic acid in the lactobacilli. Lowering of the temperature of cultivation decreased the chain length of the fatty acids of B. bifidum var. pennsylvanicus. L. lactis did not show any influence of the temperature on the chain length of the fatty acids. The percentage of unsaturated acids was temperature independent in both organisms.

Background: Lactic acid bacteria play a key role in sourdough fermentation. Lactobacilli are the most important group of lactic acid bacteria in sourdough. Therefore, the main objective of this study was to identify Lactobacillus strains in Iranian traditional wheat sourdoughs as a basis for further studies on the technological applications in the production of typical breads. Methods: Fourtee...
متن کاملDetermination of Bacteriocin Genes and Antibacterial Activity of Lactobacillus Strains Isolated From Fecal Healthy Individuals
Lactobacillus species play an important role in gastrointestinal (GI) tract function, intestinal microbiota balance, and the immune system activity by exerting a strong activity against many intestinal pathogens. The aim of this study was to isolate Lactobacillus species from fecal samples, investigate their antimicrobial properties, and characterixe their bacteriocins encoding genes. 48 fecal ...
متن کاملComparison of Lactic Acid Isomers Produced by Fungal and Bacterial Strains
Many organisms produce lactic acid by fermentation, but most industrially important strains are from the genus Lactobacillus and Rhizopus oryzae. L(+)-Lactic acid is the only optical isomer for use in pharmaceutical and food industries because human body is only adapted to assimilate this form. In this research, six strains of Lactobacillus and four strains of R. oryzae (known as high producer)...
متن کاملEvaluation of the potential probiotic properties of Lactobacillus strains isolated from traditional fermented yak milk
Probiotic strains require investigation to obtain functional products and to satisfy the increasing market demand for probiotics. Traditional fermented yak milk is a potential source of probiotic Lactobacillus strains. Lactobacillus isolates were identified on the basis of their physiological and biochemical characteristics and their probiotic properties were evaluated, including acidifying and...
متن کاملProbiotic potential of Lactobacillus sp. strains capable of phytate breakdown isolated from dairy products for using in rainbow trout (Oncorhynchus mykiss Walbaum, 1792) diet
This research investigated the feasibility of using three strains Lactobacillus sp. viz. AM11, AM13, and AM14 previously isolated from dairy products to be used as probiotics in fish diet for phytase production. The bacteria grown in oxygenated media, bile salt, acid and supernatant of digestive tract were examined for their antibiotic resistance and non-pathogenicity for using in fish feed. R...
